Heat a griddle pan or your toasted sandwich maker while you construct the sandwich.
Spread each slice of bread with a tablespoon of peanut butter and arrange the slices of banana over one. Sprinkle the top of the banana with cinnamon. If you prefer things a little sweeter, drizzle over a squeeze of honey or maple syrup.
Sandwich the peanut-butter covered slice of bread on top of the bananas and press down.
Toast the sandwich on both sides for 2-3 minutes until the bread is crisp and golden. Slice the sandwich in half at an angle and eat while it’s warm.
