No Bake Breakfast Bars


  • 120g Whole Earth Smooth Almond Butter
  • 150g coconut oil
  • 6 tbsp of Xylitol (or honey / maple syrup)
  • Pinch of salt
  • 250g porridge oats (or gluten-free oats)
  • 40g rice puffs
  • 30g dried cranberries or other dried berries
  • 30g chopped pecan nuts or other nuts and seeds


  1. Put the Almond Butter, coconut oil and sugar or maple syrup in a pan and melt gently,
  2. Tip in the oats, rice puffs, berries and nuts and mix well.
  3. Line a 20cm traybake tin with greaseproof paper.
  4. Press the mixture firmly into the tin. Freeze until firm.
  5. Once frozen, move to the fridge.
  6. Cut into bars.
  7. Store them in the freezer or fridge for a quick, healthy treat.
