Grilled Chicken Skewers with Peanut Sauce


  • 2x Chicken Breasts
  • 4 tbsp Soy Sauce
  • 3 tbsp Brown Sugar
  • 2 Garlic Cloves, finely chopped
  • 1 tbsp of Fresh Ginger, finely chopped
  • 1 tbsp Curry Powder
  • Pinch of Salt
  • Zest of one Lime
    For the Sauce
  • 1 Can of Coconut Milk
  • 1/4 Cup of Whole Earth Mix Seed Peanut Butter
  • 1/3 Cup of Brown Sugar
  • 1 tbsp Soy Sauce
  • 1 tbsp Red Curry Paste
  • Juice of One Lime


  1. Flatten the chicken and chop into chunks
  2. Make the marinade – place the soy sauce, brown sugar, garlic, ginger, curry powder, salt and lime zest into a bowl and mix well
  3. Add the chicken into the marinade sauce and cover and refrigerate overnight
  4. Soak four wooden skewers in a bowl of water
  5. When ready to cook the chicken place the pieces onto the pre-soaked skewers and place under a medium grill, turning occasionally, for around 15 minutes (or until thoroughly cooked)
  6. To make the peanut sauce add coconut milk, peanut butter, brown sugar, soy sauce and red curry paste to a saucepan and bring to the boil. Reduce the heat and simmer on low, stirring the mixture regularly. Add the lime juice just before taking off of the heat
  7. Serve the skewers on a plate alongside a bowl of peanut sauce for dipping
