Minestrone Soup

Mama Mia! Ketchup in Italy’s most famous soup?? Try it - it’s molto buona.

Serves 6

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 50g / 2oz leeks, diced
  • 100g / 3½oz carrots, diced
  • 100g / 3½oz potatoes, peeled and diced
  • 100g / 3½oz red pepper, diced
  • 50g / 2oz celery
  • 1.8l / 3pt chicken or vegetable stock
  • 25g / 1oz pasta shells
  • 100g / 3½oz frozen peas
  • Half a 420g can of Whole Earth Organic baked beans
  • 2 tbsp Whole Earth Organic Ketchup

Heat the oil in a large saucepan and sauté the onion and leek for 2 minutes. Add the carrots, potato, red pepper and celery and sauté for 4 minutes.

Add the stock and simmer, covered for 15 minutes. Add the pasta, peas and the baked beans and continue to cook for 10 minutes. Stir in the ketchup and season to taste.
